A common curing salt used in food preservation to prevent or slow spoilage. Used to cure all meats that require cooking, brining, smoking, or canning. Dissolve 1 oz curing salt in 1 qt ice cold water for use in 25 lbs of meat. Mix in curing salt/water mixture at the same time as you mix the seasoning into the ground meat.
