1 cup (2 sticks) Butter, softened
1 ¼ cups Granulated sugar
¾ tsp. Salt
1 Large egg
4 Tbsp. Milk
1 Tbsp. Vanilla bean paste
1 ¼ cups All-purpose flour
1 Tbsp. Baking powder
3-4 Tbsp. Cornstarch (added as needed to thicken dough)
Your favorite jam (for filling)
Prep: Preheat your oven to 350°F and line a baking sheet with parchment paper.
Cream: In a large bowl, cream the butter, sugar, and salt together until light and fluffy.
Mix Wet: Beat in the egg, milk, and vanilla bean paste until well combined.
Combine Dry: Stir in the flour and baking powder.
Adjust: If the dough is too sticky to roll, mix in the cornstarch until it reaches a manageable consistency.
Shape: Roll the dough into 1-inch balls and place them on the baking sheet. Use your thumb to press an indentation into the center of each ball.
Fill: Spoon a small amount of jam into each indentation.
Bake: Bake for 10–12 minutes or until the edges are just barely golden.
Cool: Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack.
