Chili has always been the gold standard for easy weeknight comfort and game-day gatherings, but adding rich pumpkin puree takes this beloved staple to an entirely new level. Far from making the chili sweet, pureed pumpkin lends an incredible, velvety body and subtle earthiness that coats every spoonful. Paired with the bold, savory depth of Big H Chili Mix, a splash of malty beer to deglaze the pot, and just a hint of aromatic pumpkin spice to highlight the seasonal warmth, this chili strikes that rare balance of cozy nostalgia and creative flavor.
It is also delightfully versatile: keep it purely plant-based with hearty black and red beans, toss in tender cubes of roasted butternut squash for texture, or brown some spicy chorizo right into the aromatics for an extra kick of smoky heat.

1 yellow onion, finely diced
2 cloves garlic, minced
2 tbsp neutral oil (olive, avocado, or vegetable)
1 can red beans, drained and rinsed
1 can black beans, drained and rinsed
2 tbsp tomato paste
3 tbsp Big H's Chili Mix
2 tsp Pumpkin Pie Spice
8 oz beer
1 cup pumpkin puree
Optional additions: chorizo (or vegetarian meat substitute)
Heat the oil in a large pot over medium heat. Add the diced onion and sauté until softened and fragrant, then stir in the garlic and cook for about 30 seconds until aromatic. (If using chorizo or meat substitute, brown it along with the onions.)
Stir in the drained beans and tomato paste, mixing well so the paste evenly coats the beans and onions.
Add the Big H's Chili Mix and Pumpkin Pie Spice, stirring continuously for about 1 minute to toast the spices and deepen their flavor.
Pour in the beer to deglaze the pot, scraping up any browned bits stuck to the bottom. Let the liquid simmer and reduce slightly.
Stir in the pumpkin puree until completely incorporated and smooth throughout the chili.
Turn the heat down to low, cover the pot, and let it gently simmer for 1 hour to allow the rich, seasonal flavors to meld together. Stir occasionally to prevent sticking.
