Why You’ll Absolutely Love This Recipe

  • The Perfect Melt-in-Your-Mouth Texture: Every single bite starts with an incredibly light, buttery cookie base. Whether you choose to quickly scoop them or take a minute to pipe elegant swirls, these cookies boast a delicate, tender crumble that practically dissolves on your tongue like a high-end shortbread.

  • That Signature Citrus Zing: The real magic happens right in the middle. The filling is a silky, ultra-creamy buttercream whipped to perfection and infused with a powerful double-hit of specialty lemon and lime sugars. This unique combination delivers an incredibly refreshing, tart finish that cuts through the sweetness beautifully and mimics that iconic rim-of-the-glass flavor experience.

  • Bakery-Quality Look, Minimal Effort: While these finished sandwiches look elegant enough to be featured in a professional, high-end display case, the entire process is deceptively simple. From mixing the dough to the final assembly, the whole batch comes together in under an hour, giving you maximum visual impact with zero kitchen stress.

Ideal Occasions for This Sweet Treat

These festive sandwich cookies are incredibly versatile and bring a splash of fun to almost any gathering. Here are just a few perfect settings to showcase your latest baking creation:

  • Backyard Summer Barbecues: When the weather gets warm, people naturally crave bright, refreshing citrus profiles over heavy, dark chocolates. These are the perfect handheld treat to pass around while enjoying the sunshine.

  • Themed Taco Nights: Take your neighborhood taco Tuesday or weekend fiesta to the next level by serving a dessert that matches the theme perfectly. It’s a fun, non-alcoholic nod to everyone's favorite pairing.

  • Bake Sales and Showcases: Because these cookies look so distinctive and elegant, they naturally draw the eye. They are fantastic for bake sales, community events, or local pop-ups where you want to offer something genuinely unique.

Make-Ahead and Entertaining Convenience

  • One of the best hidden features of this dessert is how incredibly well it holds up over time. In fact, many bakers agree that sandwich cookies like these actually improve after sitting for a day.
  • As the cookies rest in an airtight container, the moisture and vibrant citrus oils from the buttercream gently infuse into the buttery cookie bases. This process softens the crumb just slightly, locking in moisture and creating a beautifully cohesive texture where the cookie and filling melt together in perfect harmony.
  • You can easily whip these up the evening before your big event, store them in the fridge, and rest easy knowing your dessert will be absolutely flawless and full of flavor when it's time to serve.
  • Get ready to shake up your usual baking routine—your dessert table is about to get a serious, flavor-packed upgrade! With their gourmet look, refreshing flavor profile, and simple assembly, these cookies are guaranteed to become a fast favorite in your recipe rotation.

Ingredients

For the Cookies:

  • 1 ½ cups Butter, softened

  • ⅔ cup Granulated sugar

  • ⅓ cup Powdered sugar

  • 2 Large eggs

  • 1 tsp. Tequila extract (or orange flower water)

  • 2 ⅓ cups All-purpose flour

For the Citrus Filling:

  • ½ cup Butter, softened

  • 2 ½ cups Powdered sugar

  • 1 tsp. Lemon extract

  • 1 Tbsp. Lime sugar

  • 1 Tbsp. Lemon sugar

  • 1/4 - 1/2 Cup Lemon or Lime Sugar for Rolling

Directions

Make the Cookie Dough ~

  • Cream the base: In a large bowl or stand mixer, mix the 1 ½ cups of butter, ⅔ cup of granulated sugar, and ⅓ cup of powdered sugar together until the mixture is light and fluffy.

  • Add the eggs: Add the eggs one at a time, making sure to scrape down the edges of the bowl between each addition to ensure everything is evenly incorporated.

  • Flavor and flour: Mix in the tequila extract (or orange flower water). Gradually add the all-purpose flour, mixing just until combined.

Pipe and Bake ~

  • Prep the pans: Preheat your oven to 375°F and line your baking sheets with parchment paper.

  • Shape the cookies: Scoop out 1-inch balls of dough and roll them smoothly by hand before placing them on the baking sheet. Alternatively, you can transfer the dough into a pastry bag fitted with a round or star tip and pipe 2 inches onto the parchment paper.

  • Rest: Let the cookies sit on the tray for 5 minutes before baking to allow them to spread slightly and hold their shape.

  • Bake: Bake at 375°F for 10 minutes or until the edges are just barely golden. Set aside to cool completely.

Mix the Filling & Assemble ~

  • Whip the buttercream: In a medium bowl, beat the ½ cup of butter until smooth. Gradually add the 2 ½ cups of powdered sugar, lemon extract, lime sugar, and lemon sugar. Beat until smooth and creamy.

  • Assemble: Once the cookies are fully cooled, pipe or spoon a dollop of filling onto the flat side of one cookie, and top it with another to create a sandwich. Roll the edges of the assembled sandwich cookies in additional Lemon or Lime sugar.
