Ingredients

16 oz thick cut bacon chopped into 1” pieces

1 large onion, chopped

5 cloves of garlic, chopped

¼ cup cider vinegar

1 cup brewed coffee

¼ cup brown sugar

¼ cup maple brown syrup

¼ cup bourbon
-
1 chipotle in adobo, chopped

½ tsp cumin
-
½ tsp smoked paprika
-
ground black pepper to taste
Directions
Add chopped bacon to a skillet over medium heat until the bacon is crisp. Remove bacon from skillet using a slotted spoon and add to low cooker.
Drain off all but 1 Tbsp. of grease. Add the onions to the pan and sauté until tender, about 5-7 minutes.
Add the garlic to the onions and sauté for 1 minute. Add cider vinegar, stirring with a spoon to scrape up the brown bits. Add to slow cooker.
Add to slow cooker, coffee, brown sugar, maple sugar, bourbon, chipotle, cumin, smoked paprika and pepper.
Cover and cook on low for 8-10 hours. Cool slightly, add mixture to food processor and pulse until smooth but still with texture.
Store in mason jars in refrigerator until ready to use. Bring to room temperature before serving. May be frozen.
