Ingredients

  • 2 lbs. ground beef
  • 2 Tbsp. tomato paste
  • 1 large onion, chopped
  • 2 (15 oz.) cans kidney beans, drained and rinsed
  • 1 (28 oz.) can crushed tomatoes
  • 1 cup beer or water
  • 4 cloves garlic, minced
  • 1 Tbsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano
  • ½ tsp. paprika
  • pinch of cayenne pepper (optional)
  • Kosher salt
  • ground black pepper
  • Shredded cheddar, for serving

Directions

Step 1

  • In a large skillet, brown the beef and onion, then drain the fat and stir in the tomato paste.

Step 2

  • Transfer the mixture to a slow cooker, add all remaining ingredients, season to taste, and cook on low for 6 to 8 hours.

Step 3
