Ingredients

12 Tbsp. cold butter, cubed
1/2 cup dark brown sugar
1/2 cup sugar
1 large egg
2 Tbsp molasses
2 cups all-purpose flour
1 tsp baking soda
1 tsp cornstarch
¼-½ tsp salt to taste, use less if using salted butter
1 Tbsp. Old Town Spice Shop Gingerbread Spice
1 1/2 cups chocolate chips

Directions

Preheat oven to 400°F.
In a large bowl, cream together the cold, cubed butter, brown sugar, and sugar for 4 minutes until light and fluffy.
Beat in the egg and molasses for one more minute.
Stir in the flour, baking soda, cornstarch, salt, gingerbread seasoning, and chocolate chips.
Using a cookie scoop, or rolling 1 ½ Tbsp. cookie dough place dough balls onto a parchment-lined baking sheet.
Bake for 8-10 minutes or until golden.
Let cookies cool on the baking sheet for 10-15 minutes before moving.

Recipe Note

You can use either dark chocolate or semisweet chocolate chips for a different flavor. Dark chocolate will give you a deeper, richer, less sweet cookie, while semisweet chocolate provides that classic, familiar taste.
