Ingredients

  • 2 cups of water or low-sodium chicken stock
  • 2 cups red potatoes with skins on, chopped
  • ½ cup diced carrots
  • ½ cup diced celery
  • ¼ cup unsalted butter
  • ¼ cup flour
  • ¼ tsp. ground black pepper
  • ½ tsp. OTSS Ground Devil’s Backbone
  • 2 cups milk
  • 2 ½ cups shredded cheddar & Monterey jack cheese
  • 1 15 oz. can cream style corn
  • 1 4 oz. can diced green chilis
  • 2 cups diced or cubed ham

Directions

Step 1

Boil potatoes, carrots, celery and onion in water or stock for about 10 minutes or until tender.

Step 2

In a small saucepan, melt butter and add flour, pepper and Ground Devil’s Backbone seasoning. Then slowly add in milk and cook until thickened. Add cheese blend.

Step 3

Add sauce to vegetables.

Step 4

Stir in corn, green chiles and ham.

Step 5

Heat through, but don’t boil.

Step 6

To Serve, spoon into bowls and garnish with a pinch of shredded cheese.
