Ingredients

  • 1 lb. Dried rose hips
  • 2 liters Water (unsalted)
  • 1 cup Raspberry sugar

Directions

Step 1

Reconstitute: Place the dried rose hips and 2 liters of water in a Dutch oven or large heavy-bottomed pot. Let them soak for 1 hour to soften.

Step 2

Simmer: Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium-low. Simmer for 1 hour, stirring occasionally, until the rose hips are very tender.

Step 3

The Sieve Method: Set a fine-mesh strainer over a clean bowl. Ladle the rose hips and some liquid into the strainer. Use the back of the ladle or a sturdy spoon to press the fruit through the mesh. This extracts the pulp while trapping the seeds. Discard the seeds and repeat until all the fruit is pulped.

Step 4

Thicken: Return the smooth pulp and remaining liquid to the pot. Whisk in the raspberry sugar and boil until it thickens to your preferred consistency.

Step 5

Cool & Set: Remove from heat and let the jam sit on the counter for 30 minutes. Transfer to glass jars and refrigerate for at least 3 hours to allow the jam to fully set before serving.
