  • 1 Tbsp. fresh rosemary, finely chopped
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • For the Palisade Savory Peaches:
  • 4 ripe but firm Palisade peaches, halved and pitted
  • 1 Tbsp. olive oil
  • 1 Tbsp. balsamic vinegar
  • 1 Tbsp. fresh basil, finely chopped
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • Crushed red pepper flakes, pinch (optional)

Directions

Step 1: Prepare the Pork Chops

  1. In a small bowl, combine the olive oil, chopped rosemary, garlic powder, onion powder, salt, and black pepper to create a rub.
  2. Pat the pork chops dry with a paper towel. Rub the mixture evenly over both sides of each pork chop.
  3. Let the pork chops sit at room temperature for at least 15-20 minutes while you prepare the grill.

Step 2: Prepare the Peaches

  1. In a separate small bowl, whisk together the olive oil, balsamic vinegar, chopped basil, salt, and pepper. If using, add the red pepper flakes.
  2. Brush the cut sides of the halved peaches with the balsamic mixture.

Step 3: Grill the Pork Chops

  1. Preheat your grill to a medium-high heat (around 400°F or 200°C).
  2. Place the pork chops on the grill. Grill for about 4-5 minutes per side, or until they have nice grill marks and reach an internal temperature of 145°F (63°C).
