Fort Collins Fireside Mulled Wine

This recipe uses the Old Town Spice Shop's mulling spice blend, which features a classic combination of Orange Peel, Allspice, Cinnamon, Anise, and Cloves. It's the perfect drink to warm you up on a chilly evening, whether you're by a fireplace in Fort Collins or a campfire under the stars.

Ingredients

1 (750 ml) bottle of red wine (a dry, fruity wine like Merlot, Cabernet Sauvignon, or Zinfandel works best)
1/4 cup Old Town Spice Shop Mulling Spice Blend
1/4 cup brandy or orange liqueur (optional, but adds depth)
2-4 Tbsp. honey or brown sugar (adjust to your desired sweetness)
1 orange, sliced into rounds, plus more for garnish
6 cinnamon sticks, for garnish

Directions

Combine Ingredients: In a large non-reactive pot or saucepan, combine the red wine, Old Town Spice Shop Mulling Spice Blend, brandy (if using), and honey or brown sugar. Add the orange slices.
Heat Gently: Place the pot over medium-low heat. Stir occasionally to dissolve the sweetener.
Simmer, Do Not Boil: Heat the mixture until it is hot and steaming, but do not let it boil. Boiling the wine will cause the alcohol to evaporate and can make the wine taste bitter. This should take about 15-20 minutes.
Steep: Once the wine is hot, reduce the heat to low and let it simmer gently for at least 30 minutes to allow the spices to infuse fully. For a stronger flavor, you can let it steep for up to an hour.
Strain and Serve: Carefully ladle the mulled wine into mugs, using a fine-mesh sieve to strain out the spices.
Garnish: Garnish each mug with a fresh orange slice and a cinnamon stick.

Recipe Note

Make Ahead: You can prepare the mulled wine ahead of time and store it in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.

Keep it Warm: For serving at a party, you can keep the mulled wine warm in a slow cooker on the "warm" setting.

Sweetness: Taste the wine after it has steeped for a while and adjust the sweetness as needed.

Spice Intensity: If you prefer a less intense spice flavor, you can place the mulling spices in a small cheesecloth bag before adding them to the pot. This makes straining easier as well.
