Ingredients

  • 1 1/2 lbs. ground beef (80/20 or 85/15 recommended)
  • 1 large egg, lightly beaten
  • 1/3 cup plain breadcrumbs (or Panko)
  • 1/3 cup milk (any kind: whole, 2%, skim)
  • 1/3 medium yellow onion, finely chopped
  • 1-2 tbsp. Traditional Hamburger Seasoning or to taste

For the Ketchup Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons light brown sugar
  • 1 tablespoon apple cider vinegar (or white vinegar)

Directions

Step 1

Preheat Oven & Prep Pan: Preheat your oven to 350∘F (175∘C). Lightly grease a 9x5 inch loaf pan.

Step 2

Combine Wet Ingredients: In a separate medium bowl, whisk together the milk, pumpkin puree, egg, melted butter (or oil), and vanilla extract until well combined and smooth.

Step 3

Form the Loaf: Press the meat mixture evenly into the prepared loaf pan.

Step 4

Prepare the Ketchup Glaze: In a small bowl, whisk together the 1/2 cup ketchup, brown sugar, and apple cider vinegar until smooth.

Step 5

Apply Glaze Bake: Evenly spread the prepared ketchup glaze over the top of the formed meatloaf in the pan. Place the loaf pan in the preheated oven and bake for 1 hour.

Step 6

Check for Doneness: After 1 hour, the internal temperature of the meatloaf should reach 160∘F (71∘C) on a meat thermometer. The glaze should be bubbly and caramelized.

Step 7

Rest and Serve: Once cooked, remove the meatloaf from the oven and let it rest in the pan for 5-10 minutes before slicing. This allows the juices to redistribute, ensuring a moister and more flavorful meatloaf.

Step 8

Slice and Enjoy! Serve warm with your favorite sides.
