16 oz. dried pasta, spaghetti or linguine are great for this
2 Tbsp. olive oil
2 Tbsp. unsalted butter
4 onions, sliced thinly
1 tsp Roasted Garlic Salt
1 tsp Sweet Onion Sugar
1 ½ cups pasta water
1 cup parmesan cheese, grated
Kosher Salt, to taste
Black Pepper, to taste
2 tsp Caramelized Onion and Roasted Garlic Dip mix
Heat salted water for pasta in a large pot over high heat. Cook pasta for 1-2 minutes short of package directions, then drain and reserve 1 ½ cups of the pasta water for the sauce.
Over medium low heat, add olive oil and butter to a large skillet. Once the butter is melted, add your thinly sliced onions and roasted garlic salt and cook for roughly 35-45 minutes, until a deep golden color takes over the onion slices. Stir in the Sweet Onion Sugar and remove from heat.
Add the cooked onions to a blender with the parmesan and the reserved pasta water. Use ¾ -1 cup for a thicker sauce and 1-1½ cups for a thinner sauce. Blend until smooth and add back into the pan and return to medium low heat.
Add the pasta into the sauce and wait until a simmer starts up, then toss together until the pasta is fully covered. Add in salt and pepper to taste, then sprinkle some of the caramelized onion and roasted garlic dip mix as a garnish on top.
