Ingredients

1 cup garlic cloves

2 tsp. Arabian Flake Salt

2 Tbsp. Old Town Nashville Hot Chicken (optional)

2 Tbsp. Zhug Seasoning (optional)

4 Tbsp. lemon juice, divided

4 Tbsp. ice water, divided

3 cups canola or grapeseed oil, divided

Directions

Step 1

Place the cup of garlic cloves and the Arabian Sea Salt Flakes into the bowl of a food processor, adding the seasonings if desired. Pulse the garlic mix in short sets until it’s finely minced, using a spatula to scrape down the sides occasionally.

Step 2

Add 1 Tbsp. of the lemon juice and pulse again. Add a second tablespoon of lemon juice and process until it smooths out and starts getting a little fluff to the mix.

Step 3

Keep the food processor running on high, then slowly add ½ cup of the oil in a thin but continuous stream, then follow it up with another tablespoon of lemon juice.

Step 4

Continue alternating between ½ cups of oil and tablespoons of lemon juice, then change over to water when the lemon juice runs out. Do this until all of the lemon juice, ice water, and oil have been added to the bowl.

Step 5

Transfer the toum to an airtight container and store in the fridge for up to 4 weeks.
