For Roasting

  • 2 cans (28 oz each) whole peeled tomatoes (San Marzano preferred)
  • 1/4 cup extra-virgin olive oil
  • 2 Tbsp. balsamic vinegar
  • 6 cloves garlic, peeled and smashed
  • 1/2 Tbsp. dried basil
  • 1/2 tsp. dried oregano
  • Pinch of salt
  • Pinch of Black Pepper

For the Soup Base (Aromatics)

  • 2 Tbsp. butter
  • 1 medium yellow onion, diced
  • 1 stalk celery, diced
  • 1 small carrot, diced
  • 1 bay leaf
  • 1/2 Tbsp. dried basil (remaining half)
  • 1/2 tsp dried oregano (remaining half)

Liquids & Finishing

  • Reserved juice from the canned tomatoes
  • 2 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Directions

Step 1

Roast: Toss the "For Roasting" ingredients on a sheet pan at 450°F for 25 minutes.

Step 2

Sauté: Melt butter in a pot and cook the "Soup Base" aromatics until soft.

Step 3

Simmer: Add roasted tomatoes, reserved juice, and broth. Simmer for 20 minutes.

Step 4

Blend: Remove bay leaf, puree until smooth, and stir in the heavy cream.
