Ingredients

  • 1 package instant ramen noodles (3 oz.) (discard flavor packet)

  • 1 Tbsp. vegetable oil

  • 3 green onions, sliced thinly on the bias (reserve roughly a third for garnish)

  • 2 Tbsp. Gochujang paste

  • 2 Tbsp. soy or tamari sauce

  • 2 Tbsp. water

  • 1 Tbsp. mirin

  • 1 Tbsp. rice vinegar

  • 1 Tbsp. toasted sesame oil

  • 1 Tbsp. OTSS Korean Dry Rub

  • 1 Tbsp. brown sugar

  • 2 tsp. roasted garlic flakes

  • Up to 1 tsp. gochugaru flakes (for garnish)

  • Toasted sesame seeds (for garnish)

Directions

Mix the Sauce~

Add all the sauce ingredients except the gochugaru flakes and sesame seeds to a bowl and mix together; set aside.

Cook the Noodles~

Cook the noodles according to package instructions, stopping a minute short of the full cook time. Drain, and rinse in cold water.

Sauté & Cook Sauce~

Add oil into a hot wok and wait for it to start to shimmer. Add in the green onions and stir-fry for 1 minute. Add in the sauce and cook for 3 minutes, being careful of hot oil spitting and popping from the liquid.

Toss and Garnish~

Add the cold noodles to the wok and cook, stirring often, for 1 minute. Transfer the cooked, sauced noodles to serving bowls and top with toasted sesame seeds, gochugaru flakes, and reserved green onions.

Cool & Serve~

Let cool for 2–3 minutes before eating.
