If you are craving a bold, savory, and deeply satisfying noodle dish but don't want to spend an hour in the kitchen, this recipe is your new holy grail. These Sweet & Spicy Korean Noodles take standard instant ramen noodles and transform them into a gourmet, restaurant-quality meal in just 10 minutes.
The secret to this incredible sauce is the perfect balance of sweet, heat, and umami. By pairing classic Korean Gochujang and tangy rice vinegar with a savory punch of roasted garlic and our signature OTSS Korean Dry Rub, you get a complex, glossy sauce that clings perfectly to every noodle twist.
Whether you need a lightning-fast weeknight dinner, a late-night snack, or a quick lunch that packs a punch, this recipe delivers maximum street-food flavor with minimal effort.

Main Courses
Korean
1 package instant ramen noodles (3 oz.) (discard flavor packet)
1 Tbsp. vegetable oil
3 green onions, sliced thinly on the bias (reserve roughly a third for garnish)
2 Tbsp. Gochujang paste
2 Tbsp. soy or tamari sauce
2 Tbsp. water
1 Tbsp. mirin
1 Tbsp. rice vinegar
1 Tbsp. toasted sesame oil
1 Tbsp. OTSS Korean Dry Rub
1 Tbsp. brown sugar
2 tsp. roasted garlic flakes
Up to 1 tsp. gochugaru flakes (for garnish)
Toasted sesame seeds (for garnish)
Add all the sauce ingredients except the gochugaru flakes and sesame seeds to a bowl and mix together; set aside.
Cook the noodles according to package instructions, stopping a minute short of the full cook time. Drain, and rinse in cold water.
Add oil into a hot wok and wait for it to start to shimmer. Add in the green onions and stir-fry for 1 minute. Add in the sauce and cook for 3 minutes, being careful of hot oil spitting and popping from the liquid.
Add the cold noodles to the wok and cook, stirring often, for 1 minute. Transfer the cooked, sauced noodles to serving bowls and top with toasted sesame seeds, gochugaru flakes, and reserved green onions.
Let cool for 2–3 minutes before eating.
