Ingredients
- 1 ¾ cups all-purpose flour
- ¾ cup packed brown sugar
- ½ tsp Kosher salt
- 2 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- ¼ tsp ground ginger
- 1 ½ cups mashed bananas (3-4 over-ripe bananas)
- ½ cup oil or melted unsalted butter
- 2 large eggs
- 1 Tbsp. OTSS Pure Madagascar vanilla extract
- 2 tsp. Baking Powder
Directions
- Preheat oven to 350° and grease a loaf pan.
- Whisk together flour, brown sugar, baking powder, salt and spices in a large bowl until combined well.
- In a separate bowl, peel and mash bananas. Whisk in the eggs, vanilla extract, and oil or butter.
- Pour wet ingredients into dry ingredients and stir without over-mixing the batter.
- Pour mixture into greased loaf pan.
- Bake for 55-65 minutes or until you can stick in a toothpick that comes out clean.
- Once fully baked, carefully remove the loaf from the pan and place on a cooling rack.
