Ingredients

  • 1.5 lbs. ground beef, chuck, turkey, or plant-based meat sub
  • 1 15 oz. can pinto beans
  • 1 15 oz. can light red kidney beans
  • 1 15 oz. can Ranch Style Beans with jalapenos
  • 1 15 oz. can No Salt Added Original Rotel Diced Tomatoes
  • 1 4 oz. can diced green chiles
  • 1 large yellow onion, chopped
  • 1 cup lager beer or water
  • 2-3 garlic cloves, minced
  • 1 ½ Tbsp. OTSS Chili Blend Powder (add more to taste)
  • ½ tsp. OTSS Ground Devil’s Backbone
  • Kosher salt to taste
  • Black pepper to taste

Directions

Step 1

  • Heat a large skillet over medium-high heat with a drizzle of olive oil.

Step 2

  • Add meat and onion, season with salt and pepper, and cook for 4-5 minutes until meat is almost browned all over.

Step 3

  • Drain fat and add onion in large slow cooker.

Step 4

  • Combine beef, onion, beans, tomatoes, green chiles, spices and seasonings, and beer or water.

Step 5

  • Transfer to slow cooker. Season with salt and pepper to taste. Cook on high for 3-5 hours or low for 6-8 hours.

Step 6

  • Spoon into bowls and garnish with shredded cheese, chopped onion, green onion, a dollop of sour cream, or any topping of choice.

Step 7

  • Serve with cornbread, warm tortillas, or your favorite baked bread.
