  • 1 (8–12 oz) Wheel of Brie (Double cream works best)
  • 2–3 tbsp Old Town Spice Shop Hot Honey (Choose your heat: Jalapeño, Habanero, Ghost Pepper, or Carolina Reaper)
  • 1 tsp Old Town Spice Shop Italian Seasoning
  • ½ tsp Old Town Spice Shop Sea Salt (or Smoked Salt for extra depth)
  • ¼ tsp Freshly Ground Black Pepper
  • Optional: Crushed walnuts or pecans for crunch
  • 3 Tbsp. Favorite Fruit Preserves

Directions

Step 1

Prep the Oven: Preheat your oven to 350°F (175°C).

Step 2

Prepare the Brie: Place the Brie wheel on a parchment-lined baking sheet or in a small oven-safe skillet/baking dish.

Step 3

Tip: Leave the rind on and gently score the top in a crosshatch pattern about ¼ inch deep to let the honey and spices soak in.

Step 4

Season: Evenly sprinkle the Italian Seasoning, Sea Salt, and Black Pepper directly onto the top of the Brie.

Step 5

The Honey Drizzle: Drizzle about half of your chosen Hot Honey over the seasoned top. If you’re adding nuts, sprinkle them on now so they toast in the oven.

Step 6

Bake: Place in the oven for 12–15 minutes. You want the cheese to be soft and bulging, but not completely burst and running across the pan.

Step 7

The Finish: Remove from the oven and immediately drizzle the remaining Hot Honey over the top for a fresh, glossy look and a bold spicy punch. Add the preserves on top.

Step 8

Serve: Let it sit for 2–3 minutes (it stays hot for a long time!). Serve with toasted baguette slices, sourdough, or simple sea salt crackers.
