Ingredients

  • ¾ cup all-vegetable shortening
  • 1 cup brown sugar
  • 1 egg
  • ¼ cup molasses
  • 2 ¼ cups all-purpose flour
  • ¼ tsp. salt
  • 2 tsp. baking soda
  • 3 tsp. OTSS Pumpkin Pie Spice
  • ¼ cup vanilla bean sugar, for rolling
  • Crystallized ginger for top of cookie

Directions

Step 1

Cream the shortening and brown sugar in a mixer. Add the eggs and molasses, mixing until well-combined.

Step 2

Gradually add the dry ingredients directly into the mixer on low speed (no separate bowl needed) until a thick dough forms. Wrap and chill for 1 hour.

Step 3

Scoop dough into balls, roll in sugar, and place on an ungreased sheet. Flatten slightly, top with ginger, and bake at 350°F for 7–9 minutes.
