This recipe takes everything you love about the iconic hot wing experience—the bold spices, rich glaze, cooling blue cheese or ranch, and that fresh crunch of celery and carrots—and packs it into a handheld, bite-sized burger. It’s all the hot wing flavor you crave with zero bone-in hassle.
Most chicken burgers suffer from being dry or texturally flat. We solve that by folding finely matchsticked carrots and celery directly into the meat mixture. As the sliders cook, the ground chicken turns tender and savory while the embedded vegetables retain a subtle, fresh bite.
By using an 85/15 ground chicken thigh blend paired with a quick panko-and-egg-yolk binder, these patties stay juicy and tender—even when cooked to a safe internal temperature of 165 degrees.

The Slider Patties:
1 lb ground chicken (preferably 85/15 thigh blend)
1/2 cup matchstick carrots (chopped slightly if long, ~1/2-inch pieces)
1/2 cup matchstick celery (chopped to match carrot length)
1/3 cup panko breadcrumbs
1 large egg yolk (or 2 tbsp milk/cream to hydrate the panko)
1 tbsp Cajun seasoning (1.5 tsp inside meat, 1.5 tsp for surface)
1–2 tbsp hot wing rub (for exterior coating)
For Assembly & Glaze:
1/2 cup Shorty Scout hot wing glaze
4–6 slider buns (potato or brioche)
Melted butter (for toasting buns)
Blue cheese dressing/crumbles or ranch (for topping)
In a medium bowl, combine the ground chicken, matchstick carrots, matchstick celery, panko, egg yolk (or milk), and 1.5 tsp of Cajun seasoning. Mix gently until just combined—do not overwork the meat.
Divide the mixture into 4–6 equal slider patties, pressing slightly wider than your slider buns. Lightly dust both sides of each patty with the remaining Cajun seasoning and the hot wing rub.
Preheat grill to 400°F and oil the grates. Grill for 4–5 minutes per side until the internal temperature reaches 165°F.
Bake: Preheat oven to 400°F. Place on a wire rack set over a baking sheet and bake for 12–15 minutes until internal temp reaches 165°F.
Remove patties from heat at 165°F and drop them straight into a bowl with the Shorty Scout hot wing glaze. Toss to coat completely.
Toast buttered slider buns until golden. Place the glazed patty on the bottom bun, top with a drizzle of ranch or blue cheese (and optional blue cheese crumbles), and crown with the top bun.
