Ingredients

  • 1 ½ lbs. bacon, diced
  • 1 large onion, chopped
  • 3 garlic cloves, smashed
  • 1 cup apple cider vinegar
  • ½ cup water
  • ¼ cup maple sugar
  • ¼ cup espresso sugar
  • ¼ cup coconut coffee adobo rub
  • ½ cup packed brown sugar

Directions

Step 1

Set a large pan over medium high heat and add in bacon. Cook until it browns up and the fat renders off. Remove bacon from the pan with a slotted spoon, placing it on a paper towel lined plate, then drain off the bacon fat, reserving a tablespoon for cooking the onions and garlic.

Step 2

Add the onion and garlic to the pan and cook for 6-7 minutes, until the onions get translucent.

Step 3

Add in the apple cider vinegar, water, brown sugar, maple sugar and espresso sugar and the coconut coffee adobo rub, and return the bacon to the pan. Stir to combine and cook until the mix reaches a boil.

Step 4

In a slow cooker set to high, add in the entire mixture and cook for 3 ½ - 4 hours with the lid off. Alternatively, you can set the heat to low and simmer the jam for 1 hour on the stovetop, stirring occasionally.

Step 5

Let the jam cool for 10 minutes, then add it into a food processor and pulse it until it looks closer to a chunky jam. Serve hot or cold, it will keep in the fridge for 1 week.
